Our olive paste tastes intensely fruity with a subtle bitter note im Abgang. At an early stage of ripening, the olives of the Koroneiki variety are harvested by hand as early harvest quality, crushed, carefully placed in brine, sealed with a layer of olive oil and sealed under vacuum.
Only fruits from the olive groves of Giannis Kopanakis, which are cultivated around the village of Piskokefalo in the region of Sitia , are used for the Kredeli olive paste.
